**Ingredients:**

– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 cup grated carrots
– 1/4 cup finely chopped red bell pepper
– 1/4 cup finely chopped green bell pepper
– 1/4 cup finely chopped green onions
– 1/4 cup grated zucchini (squeezed dry)
– 1/4 cup grated cheese (optional)
– 1 large egg
– 1/2 cup milk (add more if needed)
– Vegetable oil for frying

**Instructions:**

1. **Prepare the Batter:**
– In a large mixing bowl, combine the flour, baking powder, salt, black pepper, paprika, garlic powder, and onion powder. Mix well.
– Add the grated carrots, chopped red bell pepper, chopped green bell pepper, chopped green onions, grated zucchini, and grated cheese (if using). Mix until all the vegetables are well coated with the flour mixture.

2. **Mix Wet Ingredients:**
– In a separate bowl, whisk together the egg and milk.
– Pour the wet mixture into the dry ingredients and stir until well combined. The batter should be thick but still spoonable. Add more milk if necessary to achieve the right consistency.

3. **Fry the Fritters:**
– Heat about 1/2 inch of vegetable oil in a large frying pan over medium heat.
– Once the oil is hot, drop spoonfuls of the batter into the oil, flattening slightly with the back of the spoon to form fritters.
– Fry the fritters for about 2-3 minutes on each side or until golden brown and crispy.
– Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain any excess oil.

4. **Serve:**
– Serve the vegetable fritters warm, with your favorite dipping sauce or as a side dish.
