Ingredients:
– 2 cups grated zucchini (about 2 medium zucchinis)
– 1 cup grated carrots (about 2 large carrots)
– 1/2 cup finely chopped red bell pepper
– 1/2 cup grated cheese (cheddar, mozzarella, or your favorite)
– 1/2 cup all-purpose flour
– 2 large eggs
– 1/4 cup chopped green onions
– 1/4 cup chopped fresh parsley
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons olive oil (for frying)

1. **Prepare the Vegetables:**
– Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This helps to ensure the fritters are crispy.
2. **Mix the Ingredients:**
– In a large mixing bowl, combine the grated zucchini, grated carrots, chopped red bell pepper, grated cheese, flour, eggs, green onions, parsley, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are evenly distributed.
3. **Heat the Oil:**
– Heat the olive oil in a large non-stick skillet over medium-high heat.
4. **Cook the Fritters:**
– For each fritter, spoon about 2 tablespoons of the vegetable mixture into the skillet. Flatten it slightly with the back of the spoon to form a patty.
– Cook for about 3-4 minutes on each side, or until golden brown and crispy.
– Adjust the heat as needed to avoid burning and ensure the fritters cook through.
5. **Drain and Serve:**
– Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
– Serve hot, with your favorite dipping sauce or a dollop of sour cream.
