– 8 chicken thighs, bone-in and skin-on
– Salt and black pepper, to taste
– 1 teaspoon paprika
– 1 tablespoon olive oil
– 1/4 cup honey
– 1/4 cup soy sauce
– 2 tablespoons apple cider vinegar
– 3 cloves garlic, minced
– 1 teaspoon ground ginger
– 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)
– Fresh parsley, chopped (for garnish)

### Instructions

1. **Preheat the Oven:**
– Preheat your oven to 400°F (200°C).

2. **Season the Chicken:**
– Pat the chicken thighs dry with paper towels. Season with salt, black pepper, and paprika.

3. **Sear the Chicken:**
– Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear until the skin is golden brown, about 5 minutes. Flip and cook for another 2 minutes on the other side. Remove the chicken from the skillet and set aside.

4. **Make the Sauce:**
– In the same skillet, reduce the heat to medium and add the honey, soy sauce, apple cider vinegar, minced garlic, and ground ginger. Stir well to combine and let it simmer for 2-3 minutes.

– If you prefer a thicker sauce, stir in the cornstarch mixture and cook until the sauce thickens.

6. **Bake the Chicken:**
– Return the chicken thighs to the skillet, skin-side up, and spoon some sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

7. **Garnish and Serve:**
– Garnish the baked chicken thighs with chopped parsley and serve hot with your favorite sides.
