Ingredients:
– 4 large bell peppers (red, yellow, or orange)
– 1 tablespoon olive oil
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 pound ground meat (beef, turkey, or chicken)
– 1 cup cooked rice or quinoa
– 1 cup fresh spinach, chopped
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste
– 1 teaspoon Italian seasoning
– 1 can (14.5 ounces) diced tomatoes, drained
Instructions:
1. **Preheat Oven**: Preheat your oven to 375°F (190°C).
2. **Prepare Bell Peppers**: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slice a small amount off the bottom to make them stand upright.
3. **Cook Filling**:
– In a large skillet, heat the olive oil over medium heat.
– Add the chopped onion and cook until softened, about 5 minutes.
– Add the minced garlic and cook for another 1-2 minutes until fragrant.
– Add the ground meat and cook until browned, breaking it up with a spoon as it cooks.
– Stir in the cooked rice or quinoa, chopped spinach, ricotta cheese, half of the shredded mozzarella cheese, and half of the Parmesan cheese.
– Add the drained diced tomatoes, Italian seasoning, salt, and pepper. Stir to combine well.
4. **Stuff Peppers**: Fill each bell pepper with the meat and rice mixture. Place them in a baking dish.
5. **Top with Cheese**: Sprinkle the remaining mozzarella and Parmesan cheeses on top of the stuffed peppers.

6. **Bake**: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is golden and bubbly.
7. **Serve**: Let the stuffed peppers cool slightly before serving. Enjoy!
Feel free to adjust the recipe based on your preferences. For example, you can add more vegetables like diced zucchini or mushrooms, or use a different type of cheese.
