Thai Basil Tofu Curry Recipe

 

 

Ingredients

  • 1 block (14 oz) firm tofu, drained and cubed
  • 1 tbsp vegetable oil or coconut oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup coconut milk (full-fat for a creamier texture)
  • 1 tbsp red curry paste (adjust to taste)
  • 1 tbsp soy sauce or tamari
  • 1 tsp brown sugar (optional, for sweetness)
  • 1 cup fresh basil leaves (Thai basil preferred if available)
  • Salt and pepper, to taste
  • Lime wedges, for serving

Instructions

  1. Prepare the Tofu: Press the tofu to remove excess water by placing it between paper towels with a weight on top for about 10-15 minutes. Then, cut the tofu into cubes.
  2. Cook the Tofu: In a large skillet or wok, heat the vegetable oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  3. Sauté the Aromatics: In the same skillet, add a bit more oil if needed. Sauté the sliced onion, minced garlic, and ginger until fragrant and the onions are translucent, about 3-4 minutes.
  4. Add the Vegetables: Add the red and yellow bell peppers to the skillet and cook for 2-3 minutes, until slightly softened but still crisp.
  5. Add Curry Paste and Coconut Milk: Stir in the red curry paste, soy sauce, and brown sugar. Cook for 1-2 minutes to allow the curry paste to release its flavors. Then, add the coconut milk, stirring to combine.
  6. Simmer and Add Tofu: Return the tofu to the skillet and stir well. Allow the curry to simmer for 5-7 minutes so the tofu absorbs the flavors and the sauce thickens slightly.
  7. Add Basil and Adjust Seasoning: Turn off the heat and stir in the fresh basil leaves until wilted. Taste the curry and adjust seasoning with salt, pepper, or more soy sauce if needed.
  8. Serve: Ladle the curry into bowls and garnish with additional basil leaves if desired. Serve hot with steamed jasmine rice and lime wedges on the side for extra flavor.
