Tater Tot Casserole Recipe

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • Salt and pepper, to taste
  • 1/2 tsp dried thyme or Italian seasoning
  • 2 cups shredded cheddar cheese
  • 4 cups frozen tater tots
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and garlic and sauté until the onion is translucent and fragrant, about 3-4 minutes. Drain any excess fat.
  3. Prepare the Sauce: Stir in the cream of mushroom soup and milk, mixing well to combine. Add the frozen mixed vegetables, salt, pepper, and thyme or Italian seasoning. Simmer for a few minutes to heat the mixture through.
  4. Assemble the Casserole: Transfer the beef and vegetable mixture into a greased baking dish. Sprinkle 1 cup of shredded cheese on top of the mixture.
  5. Top with Tater Tots: Arrange the tater tots in an even layer over the cheese, covering the entire surface of the casserole.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden and crispy.
  7. Add More Cheese: Remove the casserole from the oven and sprinkle the remaining cup of shredded cheese over the tater tots. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven and garnish with chopped parsley if desired. Serve hot.

This Tater Tot Casserole is creamy, cheesy, and full of flavor, making it the perfect comfort food for family dinners. It’s easy to prepare and great for leftovers, too. Enjoy!
