Stuffed Herb Flatbread
Ingredients:
– **For the Dough:**
– 3 cups all-purpose flour
– 1 cup warm water
– 2 teaspoons sugar
– 2 teaspoons salt
– 2 teaspoons active dry yeast
– 2 tablespoons olive oil
– **For the Filling:**
– 1 cup mozzarella cheese, shredded
– 1/2 cup feta cheese, crumbled
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh cilantro, chopped
– 1/4 cup fresh dill, chopped
– 1/4 cup green onions, finely chopped
– Salt and pepper to taste
– **For the Garnish:**
– 2 tablespoons melted butter
– 2 tablespoons fresh parsley, chopped
Instructions:
1. **Prepare the Dough:**
– In a small bowl, dissolve sugar in warm water and sprinkle the yeast over it. Let it sit for about 5-10 minutes until it becomes frothy.
– In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
– Knead the dough on a lightly floured surface for about 8-10 minutes until it becomes smooth and elastic.
– Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

– In a mixing bowl, combine the mozzarella, feta, parsley, cilantro, dill, and green onions. Season with salt and pepper to taste. Mix well.

3. **Assemble the Flatbreads:**
– Once the dough has risen, punch it down and divide it into equal portions (about 10-12 pieces).
– Roll out each portion into a small circle on a lightly floured surface.
– Place a spoonful of the filling mixture in the center of each circle. Fold the edges over the filling and pinch to seal. Gently flatten each filled dough ball with your hand.
– Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side until they are golden brown and cooked through.
4. **Garnish and Serve:**
– Brush the hot flatbreads with melted butter and sprinkle with chopped parsley.
– Serve warm as a side dish or snack.
