Ingredients:

– 1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
– 1/2 cup soy sauce
– 1/2 cup honey
– 1/4 cup ketchup
– 2 tablespoons brown sugar
– 2 tablespoons rice vinegar
– 2 tablespoons sesame oil
– 3 garlic cloves, minced
– 1 tablespoon ginger, minced
– 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
– Sesame seeds (optional, for garnish)
– Green onions, sliced (optional, for garnish)
– Cooked rice, for serving

Instructions:

1. **Prepare the Chicken:**
– Season the chicken pieces with salt and pepper.
– Heat the sesame oil in a large skillet or wok over medium-high heat.

2. **Cook the Chicken:**
– Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. **Make the Sauce:**
– In the same skillet, add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
– Add the soy sauce, honey, ketchup, brown sugar, and rice vinegar to the skillet. Stir to combine.
– Bring the sauce to a simmer and cook for 2-3 minutes.

4. **Thicken the Sauce:**
– Stir the cornstarch slurry into the sauce. Continue to simmer until the sauce thickens, about 2 minutes.

5. **Combine Chicken and Sauce:**
– Return the cooked chicken to the skillet and toss to coat the chicken in the sticky sauce. Cook for an additional 2 minutes to ensure the chicken is heated through and well-coated.
