Spicy Beef and Tomato Macaroni Comfort

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (adjust based on spice preference)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups canned diced tomatoes
  • 1 tablespoon tomato paste
  • 2 cups water or beef broth
  • 2 cups elbow macaroni
  • Fresh parsley, chopped (for garnish)

Directions

  1. Prepare the Ingredients:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  2. Cook the Beef:
    • Add the ground beef to the skillet. Break it apart with a spoon and cook until browned. Season with salt, pepper, red pepper flakes, oregano, and basil.
  3. Add Tomatoes and Simmer:
    • Stir in the diced tomatoes, tomato paste, and water or beef broth. Bring the mixture to a simmer and let it cook for about 15 minutes, or until it thickens slightly.
  4. Cook the Macaroni:
    • In a separate pot, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  5. Combine and Serve:
    • Add the cooked macaroni to the skillet with the beef and tomato sauce. Stir well to combine and let everything heat together for a few minutes.
    • Serve hot, garnished with chopped fresh parsley.
