**Ingredients:**
– 6 large eggs
– 3 medium potatoes, peeled and thinly sliced
– 1 medium onion, thinly sliced
– 1/2 cup olive oil
– Salt and pepper to taste
– Fresh chives for garnish (optional)
**Instructions:**
1. **Prep the Potatoes and Onion:**
– Peel the potatoes and cut them into thin slices.
– Peel and thinly slice the onion.
2. **Cook the Potatoes and Onion:**
– In a large non-stick skillet, heat the olive oil over medium heat.
– Add the sliced potatoes and onions to the skillet. Cook, stirring occasionally, until the potatoes are tender and the onions are soft and golden, about 15-20 minutes.
– Season with salt and pepper to taste.

3. **Prepare the Eggs:**
– In a large bowl, beat the eggs until well mixed.
– Using a slotted spoon, transfer the cooked potatoes and onions to the bowl with the beaten eggs. Mix well to combine.
4. **Cook the Tortilla:**
– Remove any excess oil from the skillet, leaving just enough to coat the bottom.
– Pour the egg mixture into the skillet and spread it out evenly.
– Cook on medium-low heat until the edges start to set, about 5-7 minutes.
– Carefully flip the tortilla using a large plate. Slide the tortilla back into the skillet to cook the other side until fully set and golden brown, about 5 minutes more.
5. **Serve:**
– Remove the tortilla from the skillet and let it cool for a few minutes.
– Slice into wedges and garnish with chopped fresh chives if desired.
– Serve warm or at room temperature.
