 Shrimp and Vegetable Stir-Fry

Ingredients:

– 1 lb (450 g) large shrimp, peeled and deveined
– 2 tablespoons vegetable oil
– 1 tablespoon sesame oil (optional, for added flavor)
– 3 cloves garlic, minced
– 1 tablespoon ginger, minced
– 1 large carrot, sliced thinly
– 1 red bell pepper, chopped
– 1 yellow bell pepper, chopped
– 1 cup baby bok choy, halved or quartered if large
– 1 cup broccoli florets (optional)
– 2-3 tablespoons soy sauce
– 1 tablespoon oyster sauce
– 1 tablespoon hoisin sauce
– 1 teaspoon chili paste or sriracha (optional, for heat)
– 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
– Salt and pepper to taste
– Sesame seeds and green onions for garnish (optional)

 Instructions:

1. **Prepare the Shrimp:**
– Pat the shrimp dry with paper towels and season lightly with salt and pepper.

2. **Stir-Fry the Vegetables:**
– Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
– Add the carrots and stir-fry for 2-3 minutes until they begin to soften.
– Add the bell peppers, bok choy, and broccoli (if using), and stir-fry for another 3-4 minutes until the vegetables are crisp-tender.
– Remove the vegetables from the skillet and set them aside.

3. **Cook the Shrimp:**
– In the same skillet, add the remaining tablespoon of vegetable oil and the sesame oil.
– Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
– Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. Be careful not to overcook the shrimp.

4. **Combine and Sauce:**
– Return the cooked vegetables to the skillet with the shrimp.
– Add the soy sauce, oyster sauce, hoisin sauce, and chili paste (if using). Stir to combine everything well.
– Pour the cornstarch slurry (cornstarch mixed with water) into the skillet and stir until the sauce thickens, about 1-2 minutes.

5. **Serve:**
– Garnish the stir-fry with sesame seeds and chopped green onions if desired.
– Serve hot over steamed rice or noodles.
