Seared Steak Cubes with Creamy Mashed Potatoes and Roasted Carrots
Ingredients:
- For the Steak:
- 500g steak (such as sirloin or ribeye), cut into cubes
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Fresh herbs (such as parsley), chopped for garnish
- For the Mashed Potatoes:
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper, to taste
- For the Roasted Carrots:
- 3 large carrots, peeled and sliced
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions:
- Preheat Oven for Carrots:
- Preheat your oven to 200°C (400°F). Toss the sliced carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until tender and slightly caramelized.
- Cook Mashed Potatoes:
- Boil the potato cubes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add milk and butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
- Sear Steak Cubes:
- Heat olive oil in a skillet over medium-high heat. Season the steak cubes with salt and pepper.
- Sear the steak cubes for about 2-3 minutes on each side or until they reach your desired doneness.
- Assemble and Serve:
- Spoon the mashed potatoes onto a plate. Arrange the seared steak cubes on top and drizzle with any pan juices.
