Ingredients:

  • 1 cup all-purpose flour (or chickpea flour for gluten-free)
  • 2 eggs
  • 1/2 cup milk (or water for a lighter version)
  • 1/2 teaspoon baking powder
  • Salt and pepper, to taste
  • 1/2 cup mixed vegetables (like finely chopped carrots, bell peppers, and green onions)
  • Fresh herbs (like cilantro or parsley), chopped
  • 1/4 teaspoon turmeric powder (optional, for color)
  • Oil or butter for frying

Instructions:

  1. Prepare the Batter:
    • In a mixing bowl, whisk together the flour, baking powder, salt, pepper, and turmeric powder.
    • Add the eggs and milk, and mix until smooth.
    • Fold in the vegetables and herbs.
  2. Cook the Pancakes:
    • Heat a non-stick skillet over medium heat and add a little oil or butter.
    • Pour a ladleful of batter into the skillet, spreading it into a thin layer.
    • Cook for 2-3 minutes until bubbles start to form on the surface, and the edges begin to lift.
    • Flip the pancake and cook for another 1-2 minutes until golden brown on both sides.
  3. Serve:
    • Stack the pancakes on a plate and serve hot with a dipping sauce like soy sauce or yogurt.
