Ingredients:

– 1 package puff pastry (thawed if frozen)
– 1 cup cooked chicken, shredded or diced (can use rotisserie chicken)
– 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
– 1/2 cup diced bell pepper (red, green, or mixed)
– 1/2 cup diced onion
– 1/2 cup cooked and diced potatoes (optional)
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 egg (for egg wash)
– Fresh dill or parsley, chopped (for garnish)

Instructions:

 

1. **Prepare the Filling:**
– In a skillet, heat the olive oil over medium heat.
– Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
– Add the cooked chicken, cooked potatoes (if using), garlic powder, paprika, salt, and pepper.
– Mix well and cook for an additional 2-3 minutes until everything is heated through.
– Remove from heat and let it cool slightly.

2. **Prepare the Puff Pastry:**
– Preheat your oven to 400°F (200°C).
– Roll out the puff pastry on a lightly floured surface to smooth out any folds.
– Cut the puff pastry into squares, approximately 4 inches by 4 inches.

3. **Assemble the Pockets:**
– Place a spoonful of the chicken mixture in the center of each puff pastry square.
– Sprinkle some shredded cheese on top of the chicken mixture.
– Fold the puff pastry over the filling to form a pocket, and press the edges together to seal.
– Use a fork to crimp the edges for a secure seal.

4. **Bake the Pockets:**
– Place the assembled pockets on a baking sheet lined with parchment paper.
– In a small bowl, beat the egg and use it to brush the tops of the puff pastry pockets.
– Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffy.

5. **Garnish and Serve:**
– Remove from the oven and let cool slightly.
– Garnish with chopped fresh dill or parsley.
