Ingredients:

– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup cold unsalted butter, cubed
– 1/4 cup cold water (more as needed)

– 1 lb (450g) ground beef or diced cooked meat (e.g., beef, chicken)
– 1 lb (450g) mushrooms, sliced
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 large carrot, grated
– 1/2 cup sour cream
– 1/2 cup grated cheese (e.g., mozzarella, cheddar)
– 1 tablespoon fresh dill, chopped (plus more for garnish)
– Salt and pepper, to taste
– 1 tablespoon vegetable oil
– **For the Topping:**
– 1 cup grated cheese (e.g., mozzarella, cheddar)
– 2 tablespoons fresh dill, chopped
Instructions:
1. **Prepare the Crust:**
– In a bowl, mix the flour and salt. Add the cold butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
– Gradually add cold water, mixing just until the dough comes together. Do not overmix.
– Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. **Prepare the Filling:**
– In a large skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
– Add the mushrooms and grated carrot, cooking until the mushrooms release their liquid and begin to brown.
– If using raw ground beef, add it to the pan and cook until browned, breaking it up with a spoon. If using pre-cooked meat, simply stir it in.
– Stir in the sour cream and dill, and season with salt and pepper. Cook for another 2-3 minutes until everything is well combined. Remove from heat and let cool slightly.

3. **Assemble the Pie:**
– Preheat your oven to 375°F (190°C).
– Roll out the chilled dough on a floured surface to fit a 9-inch pie dish or springform pan. Press the dough into the bottom and sides of the dish.
– Add the filling to the crust, spreading it evenly.
– Sprinkle the grated cheese over the top of the filling.
4. **Bake the Pie:**
– Place the pie in the preheated oven and bake for 25-30 minutes, or until the crust is golden and the cheese on top is melted and bubbly.
– Remove from the oven and let cool slightly before garnishing with fresh dill.
