Roasted Sausage and Potatoes with Bell Peppers and Onions
Ingredients:
– 1 lb (450g) smoked sausage or kielbasa, sliced into rounds
– 1.5 lbs (680g) baby red potatoes, halved or quartered
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 large onion, sliced
– 3 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon smoked paprika
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried thyme
– Salt and pepper to taste
– Fresh parsley, chopped (optional, for garnish)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine the sliced sausage, potatoes, bell peppers, and onion.
3. Drizzle with olive oil and add the garlic powder, onion powder, smoked paprika, oregano, thyme, salt, and pepper. Toss everything together until evenly coated.
4. Spread the mixture out in a single layer on a large baking sheet.
5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown, and the sausage is browned. Stir halfway through the cooking time to ensure even roasting.
