Rice Pudding Recipe
Ingredients:
- 1 cup Arborio rice (or any short-grain rice)
- 4 cups whole milk
- 1 cup water
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (plus more for garnish)
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 teaspoon salt
- 2 tablespoons butter
- Caramel sauce (for topping)
- Cinnamon sticks (for garnish)
Instructions:
- Cook the Rice:
- In a medium saucepan, combine the rice and water.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 10 minutes or until the water is absorbed and the rice is partially cooked.
- Add Milk and Cook:
- Add the milk, sugar, salt, cinnamon, and nutmeg (if using) to the rice.
- Stir well and bring to a gentle simmer over medium heat, stirring frequently to prevent the rice from sticking to the bottom.
- Continue to cook, stirring occasionally, for about 25-30 minutes or until the mixture thickens and the rice is fully cooked. The consistency should be creamy.
- Finish with Butter and Vanilla:
- Once the rice is tender and the pudding has thickened, remove it from the heat.
- Stir in the butter and vanilla extract until well combined.
- Serve:
- Spoon the rice pudding into individual serving dishes or glasses.
- Drizzle with caramel sauce on top and garnish with a sprinkle of ground cinnamon and a cinnamon stick if desired.
- Chill or Serve Warm:
- Rice pudding can be served warm immediately after cooking, or you can chill it in the refrigerator for a few hours if you prefer it cold.
Tips:
- For a creamier texture, you can add a splash of cream or a small amount of sweetened condensed milk.
- Feel free to customize your rice pudding by adding raisins, dried fruit, or a splash of rum or brandy for added flavor.
