Ingredients:

  • 1 cup Arborio rice (or any short-grain rice)
  • 4 cups whole milk
  • 1 cup water
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus more for garnish)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • Caramel sauce (for topping)
  • Cinnamon sticks (for garnish)

Instructions:

  1. Cook the Rice:
    • In a medium saucepan, combine the rice and water.
    • Bring to a boil, then reduce the heat to low, cover, and simmer for about 10 minutes or until the water is absorbed and the rice is partially cooked.
  2. Add Milk and Cook:
    • Add the milk, sugar, salt, cinnamon, and nutmeg (if using) to the rice.
    • Stir well and bring to a gentle simmer over medium heat, stirring frequently to prevent the rice from sticking to the bottom.
    • Continue to cook, stirring occasionally, for about 25-30 minutes or until the mixture thickens and the rice is fully cooked. The consistency should be creamy.
  3. Finish with Butter and Vanilla:
    • Once the rice is tender and the pudding has thickened, remove it from the heat.
    • Stir in the butter and vanilla extract until well combined.
  4. Serve:
    • Spoon the rice pudding into individual serving dishes or glasses.
    • Drizzle with caramel sauce on top and garnish with a sprinkle of ground cinnamon and a cinnamon stick if desired.
  5. Chill or Serve Warm:
    • Rice pudding can be served warm immediately after cooking, or you can chill it in the refrigerator for a few hours if you prefer it cold.

Tips:

  • For a creamier texture, you can add a splash of cream or a small amount of sweetened condensed milk.
  • Feel free to customize your rice pudding by adding raisins, dried fruit, or a splash of rum or brandy for added flavor.
