Potato Pancakes (Latkes) Recipe
Ingredients:
– 4 large potatoes
– 1 small onion
– 2 eggs
– 1/4 cup all-purpose flour
– 1 tsp salt
– 1/2 tsp black pepper
– Vegetable oil for frying
#### For the dipping sauce:
– 1 cup sour cream
– 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
– 1 tsp paprika
– Salt and pepper to taste
Instructions:
1. **Prepare the Potatoes:**
– Peel and grate the potatoes. Place the grated potatoes in a bowl of cold water to prevent browning.
– Finely grate the onion.
– Drain the grated potatoes and onion, then use a clean kitchen towel to squeeze out as much moisture as possible.
2. **Make the Batter:**
– In a large bowl, beat the eggs. Add the drained potatoes and onions.
– Stir in the flour, salt, and pepper. Mix until well combined.
3. **Fry the Pancakes:**
– Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
– Spoon about 2 tablespoons of the potato mixture into the hot oil, flattening it slightly with the back of the spoon.
– Fry until golden brown and crisp, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

4. **Prepare the Dipping Sauce:**
– In a small bowl, combine the sour cream, dill, paprika, salt, and pepper. Mix well.
5. **Serve:**
– Arrange the potato pancakes on a serving platter with the dipping sauce in the center.
