**Ingredients:**
– 4 large potatoes, peeled and boiled
– 1 cup grated cheese (cheddar, mozzarella, or a mix)
– 2 eggs
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped green onions
– 1/2 cup bread crumbs
– Salt and pepper to taste
– Olive oil for frying
**Instructions:**
1. **Prepare the Potatoes:**
– Boil the peeled potatoes until they are tender. Drain and mash them in a large bowl.
2. **Mix Ingredients:**
– Add the grated cheese, eggs, chopped parsley, chopped green onions, and bread crumbs to the mashed potatoes. Season with salt and pepper.
– Mix everything until well combined.
