 Ingredients

**For the Pork Chops:**
– 4 bone-in pork chops (about 1-inch thick)
– 2 tablespoons olive oil
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon onion powder

**For the Potatoes:**
– 4 medium potatoes, peeled and sliced
– 2 tablespoons olive oil
– Salt and pepper to taste
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary

**For the Gravy:**
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 cup chicken broth
– 1/2 cup milk
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

1. **Preheat the oven** to 375°F (190°C).

2. **Prepare the Pork Chops:**
– Season the pork chops with salt, pepper, garlic powder, and onion powder on both sides.
– In a large skillet, heat the olive oil over medium-high heat.
– Sear the pork chops for about 2-3 minutes on each side until they are golden brown. Remove and set aside.

3. **Prepare the Potatoes:**
– In the same skillet, add a bit more olive oil if needed.
– Add the sliced potatoes, season with salt, pepper, thyme, and rosemary. Cook for about 5 minutes, stirring occasionally until they start to soften.

– Place the seared pork chops on top of the potatoes in the skillet or transfer them to a baking dish.
– Cover with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the pork chops are cooked through and the potatoes are tender.

– Remove the pork chops and potatoes from the oven.
– Pour the gravy over the pork chops and potatoes.
