Pork Chops with Gravy and Mashed Potatoes
Ingredients
**For the Pork Chops:**
– 4 pork chops
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 cup chicken or beef broth
– 1 tablespoon Worcestershire sauce
– 1 tablespoon flour (for thickening the gravy)
– Fresh parsley, for garnish (optional)
**For the Mashed Potatoes:**
– 2 pounds potatoes, peeled and cubed
– 4 tablespoons butter
– 1/2 cup milk
– Salt and pepper, to taste
Instructions
**Mashed Potatoes:**
1. Place the potatoes in a pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
2. Drain the potatoes and return them to the pot.
3. Add butter and milk, then mash the potatoes until smooth. Season with salt and pepper to taste. Keep warm.
**Pork Chops:**
1. Season the pork chops with salt and pepper on both sides.
2. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 4-5 minutes per side. Remove the pork chops from the skillet and set aside.
3. In the same skillet, add the chopped onion and sauté until softened, about 3 minutes. Add the garlic and cook for an additional minute.
4. Sprinkle the flour over the onions and garlic, and stir to combine.
5. Slowly add the broth and Worcestershire sauce, stirring constantly until the gravy thickens.
6. Return the pork chops to the skillet and simmer in the gravy for about 10 minutes, or until the pork chops are cooked through.
7. Serve the pork chops over the mashed potatoes, spooning the gravy over the top. Garnish with fresh parsley if desired.
