*Poppy Seed Bread Rolls*

**Ingredients:**

– **3 1/2 cups (450g) all-purpose flour**
– **2 tablespoons poppy seeds**
– **1 packet (2 1/4 teaspoons) active dry yeast**
– **1/4 cup (50g) sugar**
– **1 teaspoon salt**
– **1 cup (240ml) warm milk (110°F/43°C)**
– **1/4 cup (60g) unsalted butter, melted**
– **2 large eggs** (1 for the dough and 1 for egg wash)
– **Optional: Honey or extra melted butter** for brushing

 **Instructions:**

1. **In a large mixing bowl, combine** the warm milk, sugar, and yeast. Stir gently and let sit for 5-10 minutes, until the mixture becomes frothy.

2. **Add the melted butter, 1 egg, salt, and poppy seeds** to the yeast mixture. Stir to combine.

3. **Gradually add the flour** to the mixture, 1 cup at a time, stirring until a dough forms.

4. **Knead the dough** on a lightly floured surface for about 8-10 minutes, or until it becomes smooth and elastic. Alternatively, you can knead the dough using a stand mixer fitted with a dough hook.

5. **Place the dough in a greased bowl**, cover with a clean cloth or plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.

6. **Once the dough has risen**, punch it down to release the air. Divide the dough into equal portions, depending on the size of your ramekins or baking containers.

7. **Shape each portion into a round ball** and place it into greased ramekins or similar oven-safe containers.

8. **Cover and let the dough rise** again for about 30-45 minutes, or until doubled in size.

9. **Preheat your oven** to 350°F (175°C).

10. **In a small bowl, whisk the remaining egg** to create an egg wash. Brush the top of each roll with the egg wash for a shiny, golden finish.

11. **Bake in the preheated oven** for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

12. **Remove from the oven** and let cool slightly. If desired, brush the tops with honey or extra melted butter for added flavor and shine.

13. **Serve warm** or at room temperature.
