Pistachio Cake Recipe
Ingredients:
**Cake:**
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 4 large eggs
– 1 tsp vanilla extract
– 2 cups all-purpose flour

– 1/2 tsp baking soda
– 1/2 tsp salt
– 1 cup whole milk
– 1 cup shelled pistachios, finely ground

– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1 tsp vanilla extract
**Frosting:**
– 1/2 cup unsalted butter, softened
– 4 cups powdered sugar
– 1/4 cup milk
– 1 tsp vanilla extract

1. **Preheat Oven**: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. **Prepare the Cake Batter**:
– In a large bowl, cream together the butter and granulated sugar until light and fluffy.
– Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
– In another bowl, whisk together the flour, baking powder, baking soda, and salt.
– Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the flour mixture.
– Fold in the finely ground pistachios.
3. **Bake the Cake**:
– Divide the batter evenly between the prepared cake pans.
– Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
– Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
4. **Prepare the Filling**:
– In a chilled mixing bowl, whip the heavy cream until soft peaks form.
– Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

– In a medium bowl, beat the butter until creamy.
– Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and spreadable.

6. **Assemble the Cake**:
– Once the cakes are completely cool, spread the whipped cream filling over the top of one of the cake layers.
– Place the second cake layer on top.
– Frost the entire cake with the buttercream frosting.
7. **Add the Topping**:
– Press the chopped pistachios onto the sides and top of the cake.
