**Ingredients:**

– 4 boneless pork chops
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 cup pineapple chunks (fresh or canned)
– 1/2 cup pineapple juice (from the can if using canned pineapple)
– 1/4 cup soy sauce
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 teaspoon fresh ginger, grated
– 1 tablespoon cornstarch
– 2 tablespoons water
– Fresh rosemary or thyme for garnish (optional)

**Instructions:**

1. **Prepare the Pork Chops:**
– Season the pork chops with salt and pepper on both sides.

2. **Sear the Pork Chops:**
– In a large skillet, heat the olive oil over medium-high heat.
– Add the pork chops and sear them for about 4-5 minutes on each side until they are nicely browned. Remove the pork chops from the skillet and set them aside.

3. **Make the Pineapple Glaze:**
– In the same skillet, add the pineapple chunks and cook for 2-3 minutes until they start to caramelize.
– In a small bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger.
– Pour this mixture into the skillet with the pineapple chunks.
– Bring the sauce to a simmer and cook for about 5 minutes.

4. **Thicken the Glaze:**
– In a small bowl, mix the cornstarch with water to create a slurry.
– Slowly pour the cornstarch slurry into the skillet, stirring constantly until the sauce thickens.

5. **Combine Pork Chops with Glaze:**
– Return the seared pork chops to the skillet.
– Spoon the pineapple glaze over the pork chops, ensuring they are well coated.
– Reduce the heat to low and let the pork chops simmer in the glaze for about 10 minutes or until they are fully cooked and reach an internal temperature of 145°F (63°C).

6. **Serve:**
– Garnish with fresh rosemary or thyme if desired.
– Serve the pineapple glazed pork chops hot with your choice of side dishes.
