Pineapple Carrot Cake Muffins Recipe
Ingredients:
- For the Muffins:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar

Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Mix Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Combine Sugars and Wet Ingredients:
- In a large bowl, beat together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Stir in the grated carrots and crushed pineapple.
- Combine Dry and Wet Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts if using.
