Ingredients:

  • For the Muffins:
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 cup granulated sugar
    • 1/2 cup light brown sugar, packed
    • 2 large eggs
    • 3/4 cup vegetable oil
    • 1 teaspoon vanilla extract
    • 1 cup grated carrots
    • 1/2 cup crushed pineapple, drained
    • 1/2 cup chopped walnuts (optional)
  • For the Frosting:
    • 4 ounces cream cheese, softened
    • 2 tablespoons unsalted butter, softened
    • 1 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • Pineapple chunks and grated carrot, for garnish

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. Combine Sugars and Wet Ingredients:
    • In a large bowl, beat together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
    • Stir in the grated carrots and crushed pineapple.
  4. Combine Dry and Wet Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts if using.
  5. Bake:
    • Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
    • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Make the Frosting:
    • In a bowl, beat the cream cheese and butter together until creamy.
    • Add the powdered sugar and vanilla extract and beat until smooth.
  7. Decorate:
    • Once the muffins are completely cool, spread or pipe the frosting on top of each muffin.
    • Garnish with pineapple chunks and grated carrot.
