Philly Cheesesteak Quesadillas

If you love bold flavors and quick comfort food, these Philly Cheesesteak Quesadillas are the perfect fusion meal. They combine the savory goodness of a classic Philly cheesesteak with the crispy, cheesy appeal of a quesadilla. Tender sliced beef, sautéed peppers and onions, and melted provolone come together inside a warm tortilla, creating a satisfying dish that’s perfect for lunch, dinner, or game-day snacks. Best of all, they’re easy to make with simple ingredients you probably already have at home.

Ingredients

1 lb thinly sliced beef
1 onion, finely diced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup mushrooms, sliced
2 cloves garlic, minced
2 tablespoons olive oil (divided)
6 slices provolone cheese
½ cup Mexican-style shredded cheese blend
¼ teaspoon black pepper
Kosher salt, to taste
Sriracha mayo or regular mayo (optional)
4 medium flour or corn tortillas

Directions

Step 1: Cook the Beef
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced beef, season with salt and black pepper, and cook until the meat is browned and tender and the excess liquid has cooked off. Transfer the beef to a plate and keep warm.

Step 2: Sauté the Vegetables
In the same skillet, add the remaining 1 tablespoon olive oil. Cook the diced onion, red and green peppers, mushrooms, and minced garlic until the vegetables become soft and fragrant. Return the cooked beef to the skillet and stir everything together. Taste and adjust seasoning if needed.

Step 3: Assemble the Quesadillas
Lay the tortillas flat on a clean surface. If desired, spread a thin layer of Sriracha mayo or regular mayo on each tortilla. Add an even layer of the beef and vegetable mixture. Place slices of provolone cheese on top and sprinkle with the shredded Mexican cheese blend. Fold the tortillas in half.

Step 4: Cook Until Crispy
Heat a clean skillet over low to medium heat with a small drizzle of oil. Cook each quesadilla for about 2–3 minutes per side, or until the tortilla turns golden brown and the cheese melts completely.

Step 5: Slice and Serve
Remove from the skillet and let cool for a minute. Slice into wedges and serve hot with your favorite dipping sauce.

They’re quick enough for a weeknight meal but delicious enough to serve at gatherings or game nights. Once you make them, don’t be surprised if they quickly become a regular request at your table!
