Ingredients:
**For the Filling:**
– 4 cups sliced peaches (fresh or canned)
– 1/2 cup granulated sugar
– 1/4 cup brown sugar
– 1 tablespoon lemon juice
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon (optional)
– 1/4 teaspoon ground nutmeg (optional)
– 1 tablespoon cornstarch (if using fresh peaches to thicken the juices)
**For the Topping:**
– 1 cup all-purpose flour
– 1 cup granulated sugar
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 cup (1 stick) unsalted butter, melted
– 1/2 cup milk
– 1/2 teaspoon vanilla extract
Instructions:
1. **Preheat Oven:**
– Preheat your oven to 375°F (190°C).
2. **Prepare the Filling:**
– If you’re using fresh peaches, peel and slice them. If using canned peaches, drain them well.
– In a large mixing bowl, combine the peaches, sugars, lemon juice, vanilla extract, cinnamon, and nutmeg (if using).
– If using fresh peaches, sprinkle the cornstarch over the peach mixture and stir well to combine.
– Pour the peach mixture into a 9×13-inch baking dish.

3. **Make the Topping:**
– In another mixing bowl, whisk together the flour, sugar, baking powder, and salt.
– Add the melted butter, milk, and vanilla extract, and stir until the mixture forms a smooth batter.
4. **Assemble the Cobbler:**
– Spoon the batter over the peaches in the baking dish, spreading it out as evenly as possible. It’s okay if the batter doesn’t cover all the peaches; it will spread as it bakes.
5. **Bake:**
– Bake the cobbler in the preheated oven for 40-45 minutes, or until the top is golden brown and the peach filling is bubbling.
6. **Serve:**
– Let the cobbler cool for a few minutes before serving.
– Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Enjoy your warm and comforting Peach Cobbler!
