 **Nutella Cinnamon Sugar Doughnuts**

 

 **Ingredients:**

**For the Doughnuts:**
– 2 1/4 teaspoons active dry yeast (1 packet)
– 3/4 cup warm milk (about 110°F or 43°C)
– 1/4 cup granulated sugar
– 1/4 teaspoon salt
– 2 large eggs
– 1/4 cup unsalted butter, melted
– 3 cups all-purpose flour, plus extra for rolling
– Vegetable oil, for frying

**For the Filling:**
– 1/2 cup Nutella (or more, if desired)

**For the Cinnamon Sugar Coating:**
– 1/2 cup granulated sugar
– 1 tablespoon ground cinnamon
– 1/4 cup unsalted butter, melted (for brushing)

1. **Prepare the Dough:**
– In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes, or until it becomes frothy.
– In a large bowl, whisk together the sugar, salt, eggs, and melted butter. Add the yeast mixture and stir to combine.
– Gradually add the flour, one cup at a time, mixing until a soft dough forms.
– Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.
– Place the dough in a lightly greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

2. **Shape the Doughnuts:**
– Once the dough has risen, punch it down and turn it out onto a floured surface.
– Roll the dough out to about 1/2 inch thick.
– Use a round cutter (about 3 inches in diameter) to cut out circles from the dough. If you want a filled doughnut, do not cut out the center.
– Place the cut doughnuts on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.

3. **Fry the Doughnuts:**
– In a large pot, heat about 2 inches of vegetable oil to 350°F (175°C).
– Carefully fry the doughnuts, a few at a time, for about 1-2 minutes on each side, or until golden brown.
– Use a slotted spoon to remove the doughnuts from the oil and drain them on a paper towel-lined plate.

4. **Fill the Doughnuts:**
– Once the doughnuts have cooled slightly, use a piping bag fitted with a small round tip to fill each doughnut with Nutella.
– Insert the tip into the side of each doughnut and squeeze gently until the doughnut is filled.

– In a small bowl, mix together the granulated sugar and ground cinnamon.
– Brush each filled doughnut with melted butter and then roll them in the cinnamon sugar mixture until evenly coated.
