Moussaka (Eggplant and Potato Casserole)

Ingredients:

For the Vegetable Layers:

  • 1 large eggplant, sliced into rounds
  • 2 medium potatoes, sliced into rounds
  • Olive oil, for brushing
  • Salt and black pepper, to taste

For the Meat Sauce:

  • 1 lb (450g) ground beef or lamb
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • Salt and black pepper, to taste

For the Cheese Topping:

  • 1 cup shredded mozzarella or Gruyere cheese
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Prepare the Vegetables:
    • Preheat your oven to 400°F (200°C).
    • Place the eggplant and potato slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt and pepper.
    • Roast the vegetables in the preheated oven for about 15-20 minutes, flipping halfway, until they are tender and golden.
  2. Make the Meat Sauce:
    • While the vegetables are roasting, heat a large skillet over medium heat and add a drizzle of olive oil.
    • Add the chopped onion and minced garlic, sautéing until softened.
    • Add the ground beef (or lamb) and cook until browned, breaking it up with a spoon.
    • Stir in the crushed tomatoes, tomato paste, oregano, cinnamon, salt, and pepper. Simmer the sauce for about 10-15 minutes, until it thickens slightly. Remove from heat.
  3. Assemble the Moussaka:
    • Lower the oven temperature to 350°F (175°C).
    • In a baking dish, layer half of the roasted potatoes on the bottom, followed by a layer of half of the roasted eggplant.
    • Spoon half of the meat sauce over the vegetables, spreading it evenly.
    • Repeat with the remaining potatoes, eggplant, and meat sauce to create another layer.
  4. Add the Cheese Topping:
    • Sprinkle the shredded mozzarella (or Gruyere) and grated Parmesan cheese evenly over the top layer.
  5. Bake:
    • Bake the Moussaka in the preheated oven for 25-30 minutes, or until the cheese is melted and golden brown.
  6. Serve:
    • Let the Moussaka rest for a few minutes before slicing. Serve warm and enjoy!
