Ingredients:

– 8 large eggs
– 1/4 cup milk
– Salt and pepper, to taste
– 1 cup shredded cheddar cheese
– 1/2 cup chopped bell peppers (red, green, or a mix)
– 1/2 cup cooked sausage slices or crumbled sausage
– 1/4 cup chopped green onions
– 12 small flour tortillas or wonton wrappers

Instructions:

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).
– Lightly grease a 12-cup muffin tin.

2. **Prepare the Tortilla or Wonton Cups:**
– If using tortillas, cut them into circles to fit the muffin cups. Press one into each muffin cup to form a base.

3. **Mix the Egg Filling:**
– In a bowl, whisk together the eggs and milk. Season with salt and pepper.
– Stir in the cheese, bell peppers, sausage, and half of the green onions.

4. **Assemble the Cups:**
– Pour the egg mixture evenly into each muffin cup over the tortilla or wonton wrapper.
– Sprinkle any remaining sausage and cheese on top.

5. **Bake:**
– Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the tops are lightly golden.
