Ingredients:

– **Crust:**
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 1 cup unsalted butter, cold and cubed
– 1/4 to 1/2 cup ice water

– **Filling:**

– 6 large eggs
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1 cup cooked and crumbled bacon (or your choice of cooked meat)
– 1/2 cup chopped green onions
– 1/2 cup diced bell peppers (optional)
– Salt and pepper to taste
– Chopped chives for garnish

 Instructions:

1. **Prepare the Crust:**
1. In a large bowl, whisk together the flour and salt.
2. Add the cold, cubed butter and use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.
3. Gradually add ice water, 1 tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough.
4. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. **Prepare the Filling:**
1. In a medium bowl, whisk together the eggs and heavy cream until well combined.
2. Stir in the shredded cheese, cooked bacon, green onions, bell peppers, salt, and pepper.

3. **Assemble and Bake:**
1. Preheat your oven to 375°F (190°C).
2. Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness.
3. Cut out circles slightly larger than the cups of your muffin tin (or mini tart pan) and press the dough into the cups, trimming any excess.
4. Pour the filling into each crust-lined cup, filling them about 3/4 full.
5. Bake for 20-25 minutes, or until the quiches are set and the crust is golden brown.
6. Remove from the oven and let cool slightly before removing from the tin.

4. **Garnish and Serve:**
1. Garnish the mini quiches with chopped chives.
2. Serve warm or at room temperature.
