Instructions:
- Prepare the Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
- Cook the Pancakes:
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Transfer the batter to a piping bag or use a spoon, and pipe or drop small circles of batter onto the skillet.
- Cook each side for 1-2 minutes, or until golden brown.
- Serve:
- Transfer the mini pancakes to a plate and sprinkle generously with granulated sugar.
