Meatball and Potato Casserole
Ingredients:
– **For the Meatballs:**
– 1 lb ground beef
– 1/2 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 1/4 cup milk
– 1 egg
– 1 clove garlic, minced
– 1 tsp Italian seasoning

– 4-5 large potatoes, thinly sliced
– 2 cups shredded mozzarella cheese
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
Instructions:
1. **Prepare the Meatballs:**
– Preheat your oven to 375°F (190°C).
– In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
– Form the mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
– Bake the meatballs in the preheated oven for 15-20 minutes, or until fully cooked and browned.

– Grease a large baking dish or casserole dish with cooking spray or a bit of olive oil.
– Arrange a layer of thinly sliced potatoes at the bottom of the dish.
– Place the cooked meatballs on top of the potato layer.
– Sprinkle a generous amount of shredded mozzarella cheese over the meatballs and potatoes.
– Add another layer of sliced potatoes on top of the cheese.
– In a medium bowl, mix the heavy cream, grated Parmesan cheese, minced garlic, chopped parsley, salt, and pepper. Pour this mixture evenly over the top layer of potatoes.
