Meat and Potato Roast

 

 

 

Ingredients

  • 1 lb (450 g) pork or lamb shoulder, cut into chunks
  • 4-5 medium potatoes, cut into chunks
  • 1 large onion, sliced
  • 3-4 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Fresh parsley, chopped (for garnish)
  • Fresh thyme or rosemary (optional for extra flavor)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 400°F (200°C).
  2. Cut the meat into bite-sized chunks if not already done, and season with salt, pepper, paprika, and garlic powder.
  3. Cut the potatoes into similar-sized chunks for even cooking.

Step 2: Sear the Meat

  1. In a large oven-safe skillet or roasting pan, heat 2 tablespoons of olive oil over medium-high heat.
  2. Add the meat chunks and sear until they are browned on all sides. This should take about 5-7 minutes.
  3. Remove the meat from the skillet and set aside.

Step 3: Cook the Potatoes and Onion

  1. Add another tablespoon of olive oil to the skillet if needed, then add the potatoes and onion slices.
  2. Season with a bit of salt and pepper, and cook for about 5 minutes until the potatoes begin to brown slightly.

Step 4: Combine and Roast

  1. Return the seared meat to the skillet with the potatoes and onions.
  2. Add fresh thyme or rosemary sprigs if desired, and transfer the skillet to the preheated oven.
  3. Roast for 25-30 minutes or until the potatoes are tender and the meat is cooked through.

Step 5: Garnish and Serve

  1. Remove from the oven and garnish with fresh chopped parsley.
  2. Serve warm, directly from the skillet or transfer to a serving bowl.
