Lemon Tiramisu
Ingredients:

– 16 oz (450g) mascarpone cheese
– 1 cup heavy cream
– 1/2 cup powdered sugar
– 1 tsp vanilla extract
**For the Assembly:**
– 24 ladyfingers (savoiardi biscuits)
– Cocoa powder for dusting
– Lemon zest or slices for garnish (optional)
Instructions:
**1. Prepare the Lemon Syrup:**
– In a small saucepan, combine the lemon juice, water, and sugar.
– Heat over medium heat until the sugar is dissolved.
– Remove from heat and let it cool.
**2. Prepare the Lemon Curd:**
– In a medium heatproof bowl, whisk together the eggs, sugar, lemon juice, and lemon zest.
– Place the bowl over a pot of simmering water (double boiler method).
– Whisk constantly until the mixture thickens, about 10 minutes.
– Remove from heat and stir in the butter until fully melted and incorporated.
– Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
– Let it cool to room temperature, then refrigerate.

– In a large bowl, beat the mascarpone cheese until smooth.
– In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
– Gently fold the whipped cream into the mascarpone cheese until well combined.
**4. Assemble the Tiramisu:**
– Dip each ladyfinger into the lemon syrup quickly, just to soak the outer layer.
– Arrange a layer of soaked ladyfingers in the bottom of a 9×9 inch (23×23 cm) dish or individual serving cups.
– Spread half of the mascarpone mixture over the ladyfingers.
– Drizzle with lemon curd.
– Repeat with another layer of soaked ladyfingers, the remaining mascarpone mixture, and more lemon curd on top.
– Cover and refrigerate for at least 4 hours, preferably overnight.

– Before serving, dust the top with cocoa powder (optional) and garnish with lemon zest or slices.
