Lemon and Herb Grilled Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 lemons, one juiced and one sliced
- 4 cloves garlic, minced
- 1 tbsp fresh oregano, chopped (plus more for garnish)
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Marinate Chicken:
- In a bowl, combine lemon juice, minced garlic, chopped oregano, olive oil, salt, and pepper.
- Place the chicken breasts in the marinade and ensure they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat Grill:
- Preheat your grill to medium-high heat.
- Grill Chicken:
- Remove the chicken from the marinade, shaking off any excess.
- Grill the chicken breasts for 6-7 minutes on each side or until they have nice grill marks and the internal temperature reaches 165°F (74°C).
- Serve:
- Serve the grilled chicken with slices of the second lemon and a sprinkle of fresh oregano on top.
