Layered Nacho Casserole
Ingredients
– **1 lb ground beef or turkey**
– **1 packet taco seasoning**
– **1 cup salsa**
– **1 can (15 oz) black beans, drained and rinsed**
– **1 bag tortilla chips**
– **2 cups shredded cheese (cheddar, Monterey Jack, or a blend)**
– **1 cup sour cream**
– **1 cup diced tomatoes**
– **1/2 cup sliced black olives (optional)**
– **1/4 cup chopped green onions**
– **1/4 cup chopped cilantro (optional)**
Instructions
1. **Preheat Oven:**
– Preheat your oven to 350°F (175°C).
2. **Cook Ground Meat:**
– In a large skillet over medium heat, cook the ground beef until it’s browned. Drain excess fat.
– Add taco seasoning and salsa to the skillet. Stir to combine and cook for an additional 2-3 minutes.
3. **Layer the Casserole:**
– In a 9×13 inch baking dish, spread a layer of tortilla chips.
– Top with half of the cooked meat mixture, half of the black beans, and a layer of cheese.
– Repeat the layers, starting with another layer of chips, the remaining meat mixture, the rest of the beans, and another layer of cheese.
4. **Bake:**
– Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
5. **Add Toppings:**
– Remove from oven and let cool slightly.
– Top with sour cream, diced tomatoes, black olives, green onions, and cilantro before serving.
