– **Egg Wash:**
– 1 egg, beaten with 1 tablespoon of water

**Instructions:**

1. **Make the Pie Crust:**
1. In a large bowl, mix the flour, salt, and sugar.
2. Add the chilled butter pieces and cut them into the flour mixture until it resembles coarse crumbs.
3. Gradually add ice water, one tablespoon at a time, and mix until the dough begins to come together.
4. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. **Prepare the Filling:**
1. In a large bowl, combine the sliced apples, sugars, lemon juice, cinnamon, nutmeg, salt, and flour. Mix well to coat the apples.

3. **Assemble the Pie:**
1. Preheat the oven to 425°F (220°C).
2. Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie plate. Transfer the dough to the pie plate and trim the excess dough, leaving a 1-inch overhang.
3. Pour the apple filling into the pie crust and dot with butter pieces.
4. Roll out the second disk of dough and cut it into 1-inch-wide strips. Arrange the strips in a lattice pattern over the filling.
5. Trim the lattice edges and fold the overhang under itself, crimping the edges to seal.
6. Brush the lattice crust with the egg wash.

4. **Bake the Pie:**
1. Place the pie on a baking sheet and bake for 20 minutes.
2. Reduce the oven temperature to 375°F (190°C) and continue baking for 40-50 minutes, or until the crust is golden brown and the filling is bubbly.
3. If the edges of the crust start to brown too quickly, cover them with aluminum foil.
4. Allow the pie to cool on a wire rack before serving.
