Jam-Filled Cakes Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup your favorite jam (e.g., raspberry, strawberry)
Instructions:
- Preheat Oven and Prepare Pans:
- Preheat your oven to 350°F (175°C).
- Grease or line muffin tins with paper liners.
- Make the Batter:
- In a bowl, whisk together flour, baking powder, and salt.
- In another large bowl, cream together the butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Alternately whisk in the flour mixture and milk, starting and ending with the flour, until just combined.
- Assemble Cakes:
- Spoon a small amount of batter into each muffin cup, filling about one-third full.
- Add a dollop of jam to the center of each, then cover with more batter until the cups are about two-thirds full.
- Bake:
- Bake for about 20-25 minutes, or until the cakes are golden and a toothpick inserted into the center (not into the jam) comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Serve:
- These cakes can be enjoyed warm or at room temperature. Optionally, dust with powdered sugar before serving for a decorative touch.
