Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup your favorite jam (e.g., raspberry, strawberry)

Instructions:

  1. Preheat Oven and Prepare Pans:
    • Preheat your oven to 350°F (175°C).
    • Grease or line muffin tins with paper liners.
  2. Make the Batter:
    • In a bowl, whisk together flour, baking powder, and salt.
    • In another large bowl, cream together the butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then stir in vanilla.
    • Alternately whisk in the flour mixture and milk, starting and ending with the flour, until just combined.
  3. Assemble Cakes:
    • Spoon a small amount of batter into each muffin cup, filling about one-third full.
    • Add a dollop of jam to the center of each, then cover with more batter until the cups are about two-thirds full.
  4. Bake:
    • Bake for about 20-25 minutes, or until the cakes are golden and a toothpick inserted into the center (not into the jam) comes out clean.
    • Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  5. Serve:
    • These cakes can be enjoyed warm or at room temperature. Optionally, dust with powdered sugar before serving for a decorative touch.
