Italian Sausage and Spinach Soup

 

 

 

Ingredients:

  • 1 lb Italian sausage (casings removed, if applicable)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes
  • Salt and pepper to taste
  • 3 cups fresh spinach, roughly chopped
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese

  1. Cook the Sausage:
    • In a large pot, heat the olive oil over medium heat.
    • Add the Italian sausage and cook, breaking it apart with a spoon, until browned and no longer pink. Remove the sausage from the pot and set aside.
  2. Sauté Vegetables:
    • In the same pot, add the diced onion. Sauté until the onion is translucent and softened.
    • Add the minced garlic, oregano, basil, and red pepper flakes. Cook for about 1 minute until fragrant.
  3. Simmer the Soup:
    • Pour in the chicken broth and crushed tomatoes. Stir to combine.
    • Bring the mixture to a boil, then reduce the heat to a simmer. Let simmer for about 15-20 minutes to allow the flavors to blend.
    • Season with salt and pepper to taste.
  4. Add Spinach and Cream:
    • Add the chopped spinach to the pot and stir until it wilts.
    • Pour in the heavy cream and stir until well combined.
  5. Add Cheese and Serve:
    • Return the cooked sausage to the pot and stir to reheat.
    • Once the soup is hot, sprinkle shredded mozzarella cheese over the top of the soup in the pot, or add it to individual servings.
    • Allow the cheese to melt slightly before serving.

Serving Suggestions:

  • Serve this rich and comforting soup with a side of crusty bread for dipping.
  • Garnish with extra red pepper flakes or fresh basil if desired.
