Ingredients:
Cake:
– 2 cups granulated sugar
– 1/2 cup butter, softened
– 1/2 cup shortening
– 5 large eggs, separated
– 2 cups all-purpose flour

– 4 cups powdered sugar

1. **Prepare Cake Batter:**
– Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
– In a large bowl, cream together the granulated sugar, butter, and shortening until light and fluffy.
– Add egg yolks one at a time, beating well after each addition.
– In another bowl, whisk together the flour and baking soda. Gradually add to the creamed mixture alternately with buttermilk, beginning and ending with flour mixture.
– Stir in vanilla, coconut, and pecans.
2. **Whip Egg Whites:**
– In a separate bowl, beat egg whites until stiff peaks form. Fold into the batter.
– Divide the batter evenly among the prepared cake pans.

– Bake in preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
– Cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.

– Gradually add powdered sugar, beating until smooth.
– Stir in chopped pecans.

– Spread frosting between layers and over top and sides of cake.
