**Honey Garlic Chicken Bites*

Ingredients:

– 1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
– Salt and pepper to taste
– 2 tablespoons olive oil
– 3 cloves garlic, minced
– 1/4 cup honey
– 2 tablespoons soy sauce
– 1 tablespoon apple cider vinegar (or any other vinegar)
– 1 tablespoon water
– Optional: chopped fresh parsley for garnish

 Instructions:

1. **Prepare the Chicken:**
– Season the chicken pieces with salt and pepper.

2. **Sear the Chicken:**
– Heat olive oil in a large skillet over medium-high heat.
– Add the chicken pieces to the skillet in a single layer, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until the chicken is golden brown and cooked through.
– Remove the chicken from the skillet and set it aside.

3. **Make the Honey Garlic Sauce:**
– In the same skillet, lower the heat to medium and add a bit more oil if needed.
– Add the minced garlic and sauté for about 30 seconds, until fragrant.
– Stir in the honey, soy sauce, apple cider vinegar, and water. Let the mixture simmer for 2-3 minutes, or until it starts to thicken slightly.

4. **Coat the Chicken:**
– Return the cooked chicken to the skillet, tossing to coat the chicken evenly with the honey garlic sauce. Cook for an additional 2-3 minutes, allowing the sauce to glaze the chicken.
