Hearty Beef and Bean Chili Recipe
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 2 medium carrots, sliced
- 1 medium potato, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Sour cream, for serving (optional)
- Lime wedges, for serving (optional)
Instructions
- Cook the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Sauté the Vegetables: Add the diced onion, garlic, green bell pepper, and carrots to the pot. Sauté for about 5 minutes, or until the vegetables start to soften.
- Add Potatoes and Seasonings: Stir in the diced potatoes, tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another 2 minutes, allowing the spices to release their aroma.
- Add Beans, Tomatoes, and Broth: Pour in the beef broth, diced tomatoes, black beans, and kidney beans. Stir well to combine and bring the mixture to a simmer.
- Simmer the Chili: Cover the pot, reduce the heat to low, and let the chili simmer for about 30-40 minutes, or until the potatoes and carrots are tender and the flavors have melded together. Adjust seasoning with more salt and pepper if needed.
- Serve: Ladle the chili into bowls. Top with a dollop of sour cream, fresh cilantro, and lime wedges for extra flavor if desired.
