Grilled Steak Bites with Garlic Butter and Herbed Mashed Potatoes
Ingredients:
**For the Steak Bites:**
– 1.5 pounds sirloin steak, cut into bite-sized pieces
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– 2 tablespoons fresh parsley, chopped
– Salt and pepper to taste
– 2 tablespoons butter
**For the Herbed Mashed Potatoes:**
– 2 pounds potatoes (Yukon gold or russet), peeled and cubed
– 4 tablespoons butter
– 1/2 cup milk or cream
– 2 tablespoons fresh parsley, chopped
– Salt and pepper to taste
Instructions:
**Steak Bites:**
1. Season the steak bites with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add the steak bites to the skillet in a single layer and cook for about 2-3 minutes per side, until browned and cooked to your desired doneness. Work in batches if necessary.
4. Reduce the heat to medium and add the minced garlic to the skillet. Cook for about 1 minute until fragrant, stirring constantly to avoid burning.
5. Add butter and parsley to the skillet, stirring to coat the steak bites in the garlic butter sauce.
6. Remove the steak bites from the skillet and serve immediately.

**Herbed Mashed Potatoes:**
1. Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a pinch of salt to the water.
