Ingredients:
– 1 cup (125g) all-purpose flour
– 2 large eggs
– 1/2 cup (120ml) milk
– 1/2 cup (120ml) water
– 1/4 teaspoon salt
– 2 tablespoons unsalted butter, melted
– Optional: 1 tablespoon sugar (for sweet crepes)
Instructions:
1. **Prepare the Batter:**
– In a large mixing bowl, whisk together the flour and eggs.
– Gradually add in the milk and water, stirring to combine.
– Add the salt and melted butter; beat until smooth.
– For sweet crepes, you can add sugar to the batter.
2. **Rest the Batter:**
– Let the batter rest for at least 30 minutes at room temperature. This helps the flour to fully absorb the liquid and makes the crepes more tender.
3. **Cook the Crepes:**
– Heat a lightly oiled frying pan or crepe pan over medium-high heat.
– Pour about 1/4 cup of batter onto the pan, tilting it with a circular motion so that the batter coats the surface evenly.
– Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
– Repeat with the remaining batter, stacking the cooked crepes on a plate.
4. **Serve:**
