Ingredients:

– 2 lbs pork loin or pork tenderloin
– 1 cup pineapple chunks (fresh or canned)
– 1/4 cup soy sauce
– 1/4 cup brown sugar
– 1/4 cup pineapple juice (from the can or fresh)
– 2 tablespoons honey
– 2 tablespoons olive oil
– 3 garlic cloves, minced
– 1 tablespoon ginger, minced
– 1 teaspoon red pepper flakes (optional)
– Salt and pepper to taste
– Fresh parsley or cilantro for garnish

 Instructions:

1. **Prepare the Marinade:**
– In a bowl, combine soy sauce, brown sugar, pineapple juice, honey, olive oil, minced garlic, minced ginger, and red pepper flakes. Mix well.

2. **Marinate the Pork:**
– Place the pork in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

3. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C).

4. **Sear the Pork:**
– Remove the pork from the marinade and pat it dry with paper towels. Reserve the marinade for later use.
– Heat a large oven-safe skillet over medium-high heat. Add a little olive oil and sear the pork on all sides until golden brown. This should take about 2-3 minutes per side.

5. **Roast the Pork:**
– Once the pork is seared, pour the reserved marinade into the skillet and add the pineapple chunks.
– Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

6. **Rest and Serve:**
– Remove the pork from the oven and let it rest for 10 minutes before slicing.
– Garnish with fresh parsley or cilantro before serving.
