Glazed Chicken over Rice
Ingredients:
– **For the Chicken:**
– 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
– 1/2 cup cornstarch
– 2 tbsp vegetable oil
– **For the Glaze:**
– 1/2 cup soy sauce
– 1/2 cup honey
– 1/4 cup ketchup
– 1/4 cup brown sugar
– 2 cloves garlic, minced
– 1 tbsp fresh ginger, minced
– 1 tsp crushed red pepper flakes (optional)
– 2 tbsp rice vinegar
– 2 tbsp water
– 1 tbsp cornstarch
– **For Serving:**
– 2 cups cooked white or brown rice
Instructions:
1. **Prepare the Chicken:**
– In a bowl, toss the chicken pieces with cornstarch until evenly coated.
– Heat vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.

2. **Prepare the Glaze:**
– In the same skillet, add soy sauce, honey, ketchup, brown sugar, minced garlic, minced ginger, and crushed red pepper flakes (if using). Stir and bring to a simmer.
– In a small bowl, mix rice vinegar, water, and cornstarch until smooth. Add this mixture to the skillet and stir until the sauce thickens.
3. **Combine and Serve:**
– Return the cooked chicken to the skillet, tossing to coat in the glaze. Let it simmer for a few more minutes until the chicken is fully coated and heated through.
– Serve the glazed chicken over a bed of cooked rice.
