Fruit and Cream Roll Cake with Almond Topping

 

 

 

Ingredients:

For the Sponge Cake:

  • 4 large eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • A pinch of salt

For the Fruit Filling:

  • 2 cups mixed fruit, chopped (such as apples, strawberries, and peaches)
  • 2-3 tbsp sugar
  • 1 tbsp lemon juice
  • Optional: 1 tsp cinnamon (for extra flavor)

For the Cream Filling:

  • 1 cup heavy whipping cream
  • 1 cup mascarpone or cream cheese
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

For the Topping:

  • 1/2 cup sliced almonds, toasted

Instructions:

  1. Prepare the Fruit Filling:
    • In a bowl, mix the chopped fruit with sugar and lemon juice. Let it sit for about 10-15 minutes until the juices are released.
    • Spread the fruit mixture evenly on a baking sheet lined with parchment paper (as shown in the image) and set aside.
  2. Make the Sponge Cake:
    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, beat the eggs and sugar together until light and fluffy.
    • Sift in the flour, baking powder, and salt, and fold gently until combined.
    • Add vanilla extract and mix just until incorporated.
    • Pour the batter evenly over the fruit on the baking sheet.
    • Bake for about 12-15 minutes or until the cake is golden and springs back when touched.
  3. Prepare the Cream Filling:
    • In a mixing bowl, beat the heavy cream until soft peaks form.
    • Add mascarpone (or cream cheese), powdered sugar, and vanilla extract. Beat until smooth and fluffy.
  4. Assemble the Roll Cake:
    • Once the sponge cake is done and slightly cooled, carefully flip it onto a clean surface or another piece of parchment paper.
    • Spread a layer of the cream filling over the sponge, leaving a small border around the edges.
    • Carefully roll the cake from one end to the other, peeling off the parchment paper as you go.
  5. Finishing Touches:
    • Spread a thin layer of cream on top of the roll and sprinkle with toasted almond slices.
    • Chill in the fridge for at least 1 hour before slicing for best results.
  6. Serve and Enjoy!
