Fluffy Soufflé Omelette
Ingredients:
- 3 large eggs, separated
- 1 tablespoon milk or cream
- 1/4 teaspoon salt (divided)
- 1/8 teaspoon cream of tartar (optional, helps stabilize the egg whites)
- 1 tablespoon butter
- Optional fillings: shredded cheese, herbs, sautéed mushrooms, ham, etc.
Instructions:
1. Prepare the Egg Yolks:
- In a medium bowl, whisk together the egg yolks, milk or cream, and a pinch of salt until smooth and slightly pale. Set aside.
2. Whip the Egg Whites:
- In a separate, clean, dry bowl, add the egg whites. If you have it, add the cream of tartar (this helps the egg whites to stabilize).
- Using a hand mixer or stand mixer, beat the egg whites on medium speed until they start to become frothy. Gradually increase the speed to high and continue to beat until stiff peaks form. The egg whites should be glossy and hold their shape when the beaters are lifted.
3. Fold the Mixtures Together:
- Gently fold the whipped egg whites into the egg yolk mixture. Use a spatula to fold in one-third of the egg whites first to lighten the mixture, then fold in the remaining egg whites, being careful not to deflate the mixture.
4. Cook the Omelette:
- Heat a non-stick skillet over medium-low heat and add the butter. Allow the butter to melt and coat the pan evenly.
- Pour the egg mixture into the pan and spread it out evenly. Cover the skillet with a lid and let the omelette cook for about 5-8 minutes, or until the bottom is golden and the top is set.
5. Fold and Serve:
- Once the omelette is fully cooked and has puffed up, use a spatula to gently fold it in half.
- Slide the omelette onto a plate, and serve immediately. You can garnish it with fresh herbs, extra cheese, or a side of salad.

- If you want to add fillings such as cheese, sautéed vegetables, or ham, you can carefully sprinkle them onto one half of the omelette before folding it in half.
