**Ingredients:**

– 4 cups chicken broth or stock
– 1 tablespoon cornstarch (optional, for a slightly thicker soup)
– 2 large eggs
– 1/2 teaspoon ginger, grated
– 1/4 teaspoon garlic powder
– 2 green onions, finely chopped
– 1 tablespoon soy sauce
– Salt and white pepper to taste
– Sesame oil (optional)

**Instructions:**

1. **Prepare the Broth:**
– In a medium-sized pot, bring the chicken broth to a boil. If you prefer a thicker soup, mix the cornstarch with a small amount of cold water to make a slurry and add it to the boiling broth. Stir well.

2. **Add Seasonings:**
– Add the grated ginger, garlic powder, and soy sauce to the broth. Stir to combine.

– In a small bowl, beat the eggs well until they are a smooth consistency.

4. **Create the Egg Ribbons:**
– Reduce the heat to a simmer. Using a fork or chopsticks, gently swirl the broth in a circular motion. Slowly pour the beaten eggs into the soup while continuing to swirl the broth. The eggs will cook instantly and form delicate ribbons.

5. **Finish the Soup:**
– Add salt and white pepper to taste. If desired, add a few drops of sesame oil for extra flavor.

6. **Garnish and Serve:**
– Ladle the soup into bowls and top with the chopped green onions. Serve hot.
